Without those higher temperatures, these foods cannot be safely canned for shelf storage.
Why Isn’t Boiling Water Hot Enough?
This is one of the questions I see asked over and over.
It seems logical that boiling water should kill everything, but that’s not always the case.
Boiling water destroys many bacteria, molds, and yeasts. However, the spores of Clostridium botulinum can survive normal boiling temperatures in low-acid foods.
Those spores aren’t usually a problem in acidic foods like peaches, pickles, or jam. The acid prevents them from growing.
Low-acid foods are different.
Inside a sealed jar, low-acid foods provide the perfect environment for those spores to grow if they aren’t destroyed during processing.
That’s why low-acid foods require the much higher temperatures achieved inside a pressure canner.
This is one of the most important concepts to understand because it explains why pressure canning isn’t just a recommendation, it’s a safety requirement.
What Is Botulism?
Botulism is a rare but serious illness caused by toxins produced by the bacterium Clostridium botulinum.
The good news is that home canning can be very safe when you follow tested recipes and use the correct canning method for the type of food you’re preserving.
Pressure canning is specifically designed to destroy the spores that can lead to botulism in low-acid foods.
Because of that, one of the most important rules in home canning is simple:
Never substitute water bath canning for pressure canning when preserving low-acid foods.
That single rule goes a long way toward keeping your canned food safe.

Pressure Canning Equipment You’ll Need
One of the biggest misconceptions about pressure canning is that you need an expensive setup before you can get started.
While a pressure canner is an investment, you don’t need a kitchen full of gadgets. Most of the equipment you’ll use is affordable, reusable, and will last for years if you take care of it.
Let’s walk through everything you’ll need.
The Most Important Piece of Equipment: A Pressure Canner
If you only buy one thing, make it a true pressure canner.
A pressure canner is specifically designed to safely preserve low-acid foods by reaching temperatures between 240°F and 250°F, which is much hotter than boiling water.
These temperatures destroy harmful bacteria and botulism spores that can survive normal boiling temperatures.
A pressure canner should never be confused with:
- A pressure cooker
- An Instant Pot
- A water bath canner
They all serve different purposes.
Pressure Canner vs. Pressure Cooker
This is probably the most common question beginners ask.
Although they look similar, they are not the same appliance.
A pressure cooker is designed to cook food quickly.
A pressure canner is designed and tested to safely preserve food for long-term shelf storage.
Pressure canners are:
- Larger
- Hold multiple jars
- Maintain consistent pressure for long processing times
- Specifically tested for home food preservation
Pressure cookers simply haven’t been tested to safely process home-canned foods.
Never substitute a pressure cooker for a pressure canner when preserving food.
Can You Use an Instant Pot for Pressure Canning?
This question comes up constantly.
The answer is:
No.
Although Instant Pots are wonderful for making soups, beans, yogurt, and weeknight dinners, they have not been approved for home pressure canning.
Currently, neither the USDA nor the National Center for Home Food Preservation recommends using an Instant Pot for pressure canning.
Why?
Because there isn’t enough research showing that Instant Pots consistently maintain the temperatures needed to safely preserve low-acid foods.
You can absolutely use your Instant Pot to cook dinner, but when it’s time to preserve food for your pantry, use a pressure canner that’s specifically designed for the job.
Dial Gauge vs. Weighted Gauge Pressure Canners
If you’ve started shopping for a pressure canner, you’ve probably noticed there are two main types.
Both are safe.
Choosing between them mostly comes down to personal preference.
Dial Gauge Pressure Canners
A dial gauge canner has a pressure gauge on top that displays the exact pressure inside the canner.
As the canner heats, you’ll watch the needle slowly rise until it reaches the pressure specified in your recipe.
Pros
- Displays exact pressure
- Easy to monitor
- Popular with many beginners
Cons
- Must be tested for accuracy every year
- Requires more attention during processing
- Heat may need occasional adjustment
Many county extension offices will test dial gauges annually for free or for a small fee.
Weighted Gauge Pressure Canners
Instead of reading a gauge, weighted gauge canners use a weighted regulator.
When the correct pressure is reached, the weight begins to gently rock or jiggle.
That steady rocking tells you the canner is maintaining the proper pressure.
Pros
- No annual gauge testing
- Very reliable
- Simple to use
- Excellent for beginners
Cons
- Can be slightly noisier
- Doesn’t display an exact pressure reading
Personally, many experienced home canners appreciate the simplicity of weighted gauge models because the gentle rocking lets you know everything is working exactly as it should.
Which Pressure Canner Is Best for Beginners?
You’ll probably hear the same few brands recommended over and over—and for good reason.

Clean Towels
Don’t underestimate the value of a clean towel.
Before placing the lid on every jar, wipe the rim clean to remove any food residue.
This simple step prevents many seal failures.
Labels
After your jars have cooled and sealed, label each one with:
- What it is
- The date it was canned
You’ll thank yourself later when your pantry starts filling up.
Understanding How a Pressure Canner Works
Pressure canners don’t simply boil water.
Instead, they trap steam inside the sealed pot.
As steam builds, pressure increases.
That pressure allows the water temperature to rise well above its normal boiling point.
Those higher temperatures are what safely destroy harmful bacteria and botulism spores in low-acid foods.
In other words:
It’s the combination of steam, pressure, and time that makes pressure canning safe.
Don’t Be Intimidated by the Pressure
I’ll be honest, I was nervous the first time I locked the lid on my pressure canner.
I had heard stories about old pressure cookers from decades ago, and I wondered if I was doing everything right.
What I quickly learned is that today’s pressure canners have multiple built-in safety features and are designed to be used safely in home kitchens.
After a few batches, the sounds and routine become familiar, and what once felt intimidating starts to feel completely normal.
If you’re feeling nervous, that’s okay. Every experienced canner started exactly where you are.
How to Pressure Can Food Step-by-Step
Once you’ve pressure canned a few batches, you’ll realize the process is actually very repetitive. The first time can feel a little overwhelming simply because there are several steps, but after that it becomes second nature.
Here’s exactly how I pressure can food from start to finish.
Step 1: Choose a Tested Recipe
Before you even pull your pressure canner off the shelf, start with a tested recipe.
This is one area where creativity has to take a back seat to safety.
Unlike baking or cooking dinner, canning recipes are carefully tested to ensure the food heats all the way to the center of the jar for the correct amount of time.
Changing ingredients, thickening soups, or making up your own recipes can affect how heat moves through the food.
For beginner canners, I always recommend using recipes from trusted sources like:

- National Center for Home Food Preservation (NCHFP)

Once you’ve become comfortable with pressure canning, you’ll learn which small adjustments are considered safe and which should always be avoided.
Step 2: Prepare Your Jars
Wash your jars with hot, soapy water and rinse them well.
Look closely at each jar for:
- Chips around the rim
- Cracks
- Deep scratches
Even a tiny chip can prevent a proper seal.
If a jar is damaged, set it aside for dry storage instead of canning.
Unlike older canning methods, you don’t have to sterilize jars before pressure canning because they’ll be processing well above boiling temperature for an extended period of time.
Many people, myself included, like to keep jars warm before filling them simply to reduce the chance of thermal shock.
You can keep them warm by:
- Running them through the dishwasher
- Placing them in hot water
- Keeping them in a warm oven (following your jar manufacturer’s recommendations)
Warm jars and hot food make a great combination.
Step 3: Prepare Your Food
Prepare your food exactly as your tested recipe directs.
Depending on what you’re canning, this may include:
- Peeling vegetables
- Trimming meat
- Browning ground beef
- Removing excess fat
- Heating broth
- Cooking beans
- Packing jars hot or raw
One thing you’ll quickly notice is that many pressure canning recipes use the hot pack method.
Hot packing simply means the food is heated before it goes into the jars.
Benefits of hot packing include:
- Better food quality
- Less floating food
- Improved color
- More food fits into each jar
- Better heat penetration
Some foods also have approved raw pack methods, so always follow your recipe.
Step 4: Fill the Jars
Using a canning funnel, fill each jar with the prepared food.
Then add the recommended liquid.
This might be:
- Water
- Broth
- Tomato juice
- Cooking liquid
Don’t simply fill the jars to the top.
Every recipe specifies a certain amount of headspace, which is the empty space between the food and the lid.
Common headspace measurements include:
- 1 inch
- 1¼ inches
Headspace matters because food expands during processing.
Too little headspace can cause food to leak out of the jar.
Too much headspace can prevent a proper seal.
Always use the amount listed in your recipe.
Step 5: Remove Air Bubbles
Slide a bubble remover or another non-metal utensil around the inside of the jar.
This releases trapped air pockets hiding between pieces of food.
After removing bubbles, check your headspace again.
Sometimes the food settles enough that you’ll need to add a little more liquid.
Don’t skip this step—it only takes a few seconds and can improve your final results.
Step 6: Wipe the Jar Rims
This is one of those little steps that’s easy to overlook but makes a huge difference.
Using a clean, damp cloth, wipe each jar rim thoroughly.
Even a tiny bit of grease, broth, tomato sauce, or food residue can interfere with the lid sealing properly.
I make this a habit before every single jar.
Step 7: Apply the Lids
Place a new flat lid on each jar.
Then screw the band on until it’s fingertip tight.
This phrase confuses almost everyone at first.
Fingertip tight simply means tightening the band until it meets resistance using only your fingertips.
Don’t crank it down as hard as you can.
The jars need to release air during processing.
If the bands are too tight, air can’t escape properly and you may end up with buckled lids or failed seals.
Think snug….not overly tight.
Step 8: Add Water to the Pressure Canner
Unlike water bath canning, the jars are not submerged in water.
Most pressure canners only require about 2 to 3 inches of water, though you should always follow the instructions for your specific model.
Place the canning rack in the bottom of the canner.
Never allow jars to sit directly on the bottom of the pot.
The rack keeps them elevated so heat circulates evenly.
Carefully place the filled jars onto the rack using a jar lifter.
Leave a little space between the jars.
Step 9: Lock the Lid
Double-check that:
- The rack is in place.
- The jars aren’t touching.
- The correct amount of water is inside.
Now secure the lid according to your manufacturer’s instructions.
Don’t place the weight or close the vent yet.
That comes next.
Step 10: Vent the Pressure Canner
This is one of the most important steps in pressure canning, and it’s also one beginners often wonder about.
Turn the burner to high heat.
As the water heats, steam will begin escaping through the vent pipe.
Allow that steam to flow steadily for 10 full minutes before placing the weighted gauge on the vent or closing the petcock, depending on your canner.
This venting period removes trapped air from inside the canner.
A canner filled with pure steam heats much more evenly than one containing a mixture of steam and air.
Never rush this step.
Set a timer for the full ten minutes.
Step 11: Bring the Canner to Pressure
After venting for ten minutes, place the weight on the vent or close the vent according to your canner’s instructions.
Now the pressure inside the canner will begin to build.
Watch your gauge or weighted regulator carefully.
When the canner reaches the pressure required by your recipe, adjust the burner so it maintains that pressure steadily.
One of the biggest mistakes beginners make is constantly turning the burner up and down.
Small adjustments are all that’s needed.
After a few batches, you’ll quickly learn exactly where your stove likes to stay.
Step 12: Start the Timer
This is another step that’s easy to get wrong.
Do not start timing when you turn on the burner.
Do not start timing during the venting period.
Do not start timing while pressure is building.
Only begin timing once the canner has reached the correct processing pressure.
From that point on, maintain a steady pressure for the entire processing time.
If the pressure ever drops below the recommended level—even briefly—you’ll need to bring the canner back up to pressure and restart the processing time from the beginning.
It sounds frustrating, but maintaining consistent pressure is essential for food safety.
Step 13: Let the Canner Cool Naturally
When the timer goes off, turn off the heat.
Now comes the hardest part for impatient canners.
Wait.
Do not:
- Remove the weight.
- Open the vent.
- Run cold water over the canner.
- Try to cool it quickly.
Allow the pressure to return to zero naturally.
Forcing the canner to cool can cause liquid loss from the jars, failed seals, or underprocessed food.
The waiting is worth it.
Step 14: Remove the Jars
Once the canner has completely depressurized and it’s safe according to your manufacturer’s instructions, carefully remove the lid.
Open the lid away from your face so the remaining steam escapes safely.
Using a jar lifter, remove each jar and place it on a towel or cooling rack.
Leave about an inch of space between jars for air circulation.
As tempting as it is, don’t tighten the bands or press on the lids.
Now comes one of the most satisfying moments in all of canning.
Over the next several minutes, or sometimes a few hours, you’ll start hearing the familiar “ping!” as the lids seal.
It’s one of my favorite sounds in the kitchen because it means another batch has been safely preserved.
Step 15: Let the Jars Rest
Leave the jars completely undisturbed for 12 to 24 hours.
Avoid moving them.
Don’t test the lids.
Don’t remove the bands.
Simply let them cool at room temperature.
After they’ve rested overnight, remove the screw bands and check each seal.
A properly sealed lid will be slightly concave and won’t flex up and down when pressed in the center.
Any jar that didn’t seal should be refrigerated and used within a few days or reprocessed using a new lid according to safe canning guidelines.
Step 16: Label and Store Your Jars
Congratulations…you’ve officially pressure canned your first batch!
Before placing your jars in the pantry, label each one with:
- The contents
- The date it was canned
Store sealed jars:
- In a cool place
- In a dark location
- Without the screw bands attached
Removing the bands during storage makes it easier to spot a seal failure later and helps prevent trapped moisture from causing rust.
A pantry full of neatly labeled jars isn’t just beautiful—it’s one of the most rewarding parts of learning to preserve your own food.
Common Pressure Canning Mistakes (And How to Avoid Them)
No one gets through their canning journey without making a mistake.
I know I certainly didn’t.
The good news is that most canning mistakes don’t ruin your equipment or mean you’ve failed—they’re simply learning experiences. Once you know what causes them, they’re usually easy to avoid.
Here are the most common pressure canning mistakes I see beginners make.
1. Using a Pressure Cooker Instead of a Pressure Canner
This is probably the biggest mistake new canners make.
Pressure cookers are wonderful kitchen appliances, but they are not designed or tested for safely preserving food.
Likewise, an Instant Pot should not be used for pressure canning low-acid foods.
A true pressure canner is specifically engineered to maintain the temperatures required to safely preserve shelf-stable food.
If you’re investing the time and effort into home canning, it’s worth using the correct equipment from the beginning.
2. Guessing Instead of Using a Tested Recipe
One of the things I love about cooking is being able to experiment.
Canning isn’t like that.
Recipes have been carefully tested for:
- Jar size
- Ingredient ratios
- Food density
- Processing time
- Heat penetration
- Acidity
Changing those factors—even with good intentions—can make a recipe unsafe.
Stick with tested recipes, especially while you’re learning.
Once you understand how canning works, you’ll know which adjustments are safe and which aren’t.
3. Forgetting to Vent the Canner
Venting is one of the easiest steps to overlook.
After steam begins escaping through the vent, allow it to flow steadily for 10 full minutes before placing the weight on the canner.
Skipping this step traps air inside the canner.
That air lowers the internal temperature, even if the pressure gauge appears correct.
It only takes ten minutes, but it makes a big difference in safe processing.
4. Starting the Timer Too Soon
I’ve seen this mistake countless times.
Remember:
The timer doesn’t start when you:
- Turn on the burner
- Lock the lid
- See steam escaping
- Finish venting
The processing time begins only after the canner has reached the correct pressure.
This is one of the easiest ways to accidentally underprocess food.
5. Letting the Pressure Drop
Once your processing time begins, the pressure should stay at or above the recommended level the entire time.
If the pressure falls below the required amount, even for a few seconds, you’ll need to:
- Bring the canner back up to pressure.
- Start the processing time over from the beginning.
It feels frustrating, but food safety always comes first.
After a few batches you’ll get a feel for your stove, and maintaining steady pressure becomes much easier.
6. Cooling the Canner Too Quickly
When you’re eager to see your finished jars, waiting for the pressure canner to cool naturally can feel like the longest part of the entire process.
Don’t try to speed it up.
Never:
- Remove the weight early
- Open the vent
- Run cold water over the lid
- Set the canner outside in cold weather
Rapid cooling often causes food to siphon liquid out of the jars and may interfere with proper processing.
Patience is part of pressure canning.
7. Tightening the Bands Too Much
It surprises many beginners that tighter isn’t better.
The screw bands should be fingertip tight, meaning turn with your fingertips just until you feel tension then STOP.
If they’re overtightened, air can’t escape from the jars properly during processing.
That can lead to:
- Buckled lids
- Seal failures
- Food siphoning
8. Ignoring Headspace
Headspace is the empty space between the food and the lid.
It isn’t just a suggestion.
Each tested recipe specifies the proper headspace because food expands during processing.
Too little headspace may cause food to push out under the lid.
Too much headspace can interfere with sealing.
Always measure it instead of guessing.
9. Forgetting to Remove Air Bubbles
Those tiny pockets of trapped air may not seem important, but they can:
- Affect headspace
- Lead to liquid loss
- Reduce sealing success
Running a bubble remover around the inside of the jar only takes a few seconds and is well worth the effort.
10. Wiping the Rim Poorly
A tiny drop of broth.
A smear of tomato sauce.
A bit of grease.
That’s often all it takes to prevent a lid from sealing.
Before placing every lid, wipe the rim with a clean damp cloth.
It’s one of the simplest habits you can develop.
Why Did My Jars Lose Liquid?
One of the most common questions after pressure canning is:
“Why is there less liquid in my jars now?”
This is called siphoning.
Siphoning happens when liquid is forced out of the jars during or immediately after processing.
Some liquid loss is completely normal.
Common causes include:
- Pressure changing too quickly
- Cooling the canner too fast
- Pressure fluctuating during processing
- Overtightened bands
- Incorrect headspace
As long as:
- The jar sealed properly
- At least half the liquid remains
- The food isn’t sticking up above the liquid excessively
the food is generally still safe according to tested home canning guidance.
While siphoning doesn’t usually affect safety, it can reduce food quality over time if a large amount of liquid is lost.
Why Didn’t My Jars Seal?
Few things are more disappointing than finding a lid that didn’t seal the next morning.
Fortunately, most seal failures have a simple explanation.
Some of the most common causes include:
- Food on the jar rim
- Chipped jars
- Damaged lids
- Incorrect headspace
- Loose screw bands
- Overtightened screw bands
- Moving jars while they cooled
- Defective jars
If a jar doesn’t seal, don’t panic.
Simply refrigerate it and enjoy it within a few days, or reprocess it within the timeframe recommended by your tested recipe using a new lid.
Can I Reuse Canning Lids?
Flat metal lids are designed for one-time use.
Once they’ve sealed, they shouldn’t be reused for another canning batch.
The screw bands, however, can usually be reused for years.
