Pickled Eggs with Jalapenos Recipe:

Ingredients:

  • 12 hard-boiled eggs, peeled
  • 1 1/2 cups white vinegar
  • 1/2 cup water
  • 1/2 cup sliced jalapenos
  • 2-3 whole cayenne peppers
  • 1 teaspoon black peppercorns
  • 1 teaspoon coriander seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon kosher salt
  • 1/2 teaspoon sugar (optional, for balance)
  • 2 cloves garlic, peeled and smashed

Instructions:

1: Hard-Boil the Eggs:

  • Begin by hard-boiling a dozen eggs. Once done, cool them, peel, and set them aside. Use my easy peel technique to ensure perfectly smooth eggs every time.

2: Prepare the Pickling Solution:

  • In a saucepan, combine the white vinegar, water, sliced jalapenos, cayenne peppers, black peppercorns, coriander seeds, mustard seeds, kosher salt, sugar (if using), and smashed garlic cloves. Bring the mixture to a boil over medium heat.

3: Simmer and Infuse:

  • Reduce the heat and let the pickling solution simmer for about 5-7 minutes to allow the flavors to meld. Taste the solution to adjust the heat level by adding more jalapenos or cayenne peppers if desired.

4: Pack the Jars:

  • Place the peeled hard-boiled eggs in clean glass jars, ensuring they fit comfortably without overcrowding.

5: Pour the Pickling Solution:

  • Carefully ladle the hot pickling solution, along with the jalapenos and cayenne peppers, into the jars, covering the eggs completely.

6: Secure with Lid:

  • Place lid on the jar.

7: Refrigerate:

  • Refrigerate the jars and let the flavors meld for at least a week before enjoying.

8: Enjoy and Share:

  • After a week of pickling (or longer for enhanced flavor), your Spicy Pickled Eggs are ready to savor. They make for a zesty snack, a flavorful addition to salads, or a unique garnish for cocktails.
