Cowboy Candy Jalapenos Recipe:

Ingredients:

  • 2 lbs fresh jalapeno peppers, sliced into rounds
  • 2 cups apple cider vinegar
  • 4 cups granulated sugar
  • 2 tsp mustard seeds
  • 2 tsp turmeric
  • 1 tsp chili flakes

Instructions:

1: Prepare the Jalapenos:

  • Wear gloves when handling jalapenos to avoid contact with the oils that can irritate your skin and eyes. Slice the jalapenos into rounds, discarding the stems.

2: Combine Ingredients:

  • In a large pot, combine the apple cider vinegar, granulated sugar, mustard seeds, turmeric, and chili flakes. Stir well to dissolve the sugar and bring the mixture to a boil over medium heat.

3: Add Jalapenos:

  • Once the mixture is boiling, carefully add the sliced jalapenos. Reduce the heat and simmer for about 4-5 minutes, or until the jalapenos become slightly translucent but still retain some crunch.

4: Pack the Jars:

  • Using a slotted spoon, pack the candied jalapenos into sterilized canning jars, leaving about 1/4-inch headspace at the top. Ladle the hot liquid from the pot over the jalapenos, ensuring they are fully submerged.

5: Remove Air Bubbles:

  • Insert a clean utensil or chopstick into the jars to remove any trapped air bubbles. Adjust the liquid level if necessary to maintain the headspace.

6: Seal the Jars:

  • Wipe the jar rims clean, place sterilized lids and rings on the jars, and screw them on snugly.

7: Process in a Water Bath:

  • Place the sealed jars in a water bath canner with boiling water, making sure they are completely submerged. Process half pints for 10 minutes and pints for 15 minutes.

8: Cool and Store:

  • Carefully remove the jars from the water bath and allow them to cool on a clean towel or cooling rack. As they cool, you’ll hear the satisfying “ping” of the lids sealing, indicating a successful canning process.

9: Enjoy Throughout the Year:

  • Once the jars have cooled, store them in a cool, dark place. The Candied Jalapenos will improve in flavor over time, so let them sit for a few weeks before opening. They can last for up to a year or more.
